...Friday Favorites...Peppers and Poppers...

...a dear friend gifted us these homegrown peppers from his fall harvest...

...I have plans for all but the Scotch Bonnets...not quite sure what to do with those...as they are so.very.hot...
...so I donned some gloves and sliced the jalapeños...
...removed the hot seeds and pith...I'm wearing gloves because my sweet sissie and I learned our lesson with jalapeños many years ago when Daddy gave us a bunch of peppers and we cut them up without gloves...and touched our faces and lips...we were pretty miserable...so now I'm careful to wear gloves...they may not be that hot but I'm not taking any chances...
...I didn't have any Daiya shredded cheddar...so I just chopped up a couple of slices...
...and some homemade vegan cream cheese...
...and stuffed the halved peppers...
...I toasted a whole wheat bun...and put that and some vegan parmesan and corn flakes into the food processor to make the coating...
...then for a vegan 'egg' wash...I just mixed up some all purpose flour salt and water...I just want to make the topping cling to the poppers...
...arranged my dredging ingredients...
...dipped each pepper half in the vegan 'egg' wash...
...then generously coated each one with the crumbly mixture...
...and put them on a foil lined pan...
...and baked at 400 degrees F for about 15 minutes...until they were crispy and golden...
...and served them with some nachos...and vegan ranch...
...they were so yummy...definitely a favorite...

  2. I do love jalapeno poppers, but have never made them as fresh jalapenos are hard to track down in the UK, perhaps I should give them a go with baby peppers, though I know they will not taste they same...I ponder the thought. Yours look really tasty and crispy
