...W.I.A.Y. ...

...I threw a bunch of fruit and some spinach stems in the Vitamix...
...mango, spinach, peach, and pear...gave it a whirl...
...and I had two quarts of delicious mango/peach smoothie for breakfast...I only drank one jar and put the other in the fridge...it was yummy...
...and as almost always happens when I just have a smoothie for breakfast...by mid-morning I was hungry...so I toasted some leftover Tunisian Bread...and ate a handful of grapes...
...then for lunch I had a very delicious avocado sandwich...it was so good...like fancy restaurant $12 sandwich good...and it was rally simple ingredients too...tofu, vidalia onion, homemade vegan mayo (recipe in this post), romaine lettuce, and whole wheat toast...
...and mid-afternoon when I got hungry...I threw some frozen broccoli stems in the George Forman grill...
...and just ate those out of hand...
...remember Tuesday's sauce that I made with Julia...and I said I thought it would make a good stroganoff...I just added some vegan sour cream and tofu...
...and I was right...it makes a delicious rich stroganoff...and we had Brussels sprouts, green beans and a salad with that...

  1. Looks lovely and healthy as usual! We ate nothing special - eggs for breakfast with veggies, crackers for lunch and spaghetti for dinner. Love, K

  2. The smoothie looks so good! I love when there is spinach or roquette in it.
    I agree; your avocado sandwich must have been perfect! Love that too!
    And your supper also!

    Yesterday I made a mushroom risotto that was pretty good.
