...10.30...What I ate in a day...as a Vegan...

...just another day of vegan eats...
...it's so dark in the mornings now that daylight savings time is coming to an end...
...but I had organic toasted oats...generically known around here as Cheerios...the same way that any pop is a 'coke'...

...with almond milk and a sliced banana...
...for lunch I baked some tofu...
...and had that with some crusty bread and a big salad...à la Seinfeld...
...then I got hungry in the afternoon...and made a favorite lunch/snack...I just microwaved a potato with some frozen broccoli and topped it with some vegan shreds...that was yummy and filling...
...and the Man had picked up this heirloom black rice to try...
...so we made that for dinner.
...with some turnip greens...
...and the Man made a big pot of cajun beans...but he got the a little bit too spicy...
...still good though...just made me sniffle a little bit...

...what did you eat yesterday?...

~Have a lovely day!

  1. I tend to forget what I've eaten rather quickly but after a bit of thought remembered I had a nice green salad (romaine, cherry tomatoes, broccoli bits, kalamata olives and feta). I paired with a small amount of basmati rice and BBQ ribs.

I tried the black rice a few years ago. Did you like it? I'm thinking of trying it again or buying some wild rice to have with beans and corn bread.

    1. Hi Penny,
...we did like the black rice...and I like wild rice too...but we don't have either very often...

  2. I was at the airport and had lunch with Richard. He warmed up packaged rice and poured over a pocket of an Indian sauce with chickpeas. Don't remember the name but it was vaguely like a curry. Vegan and very yummy.

    1. Hey K,
That sounds yummy...those packets are so convenient and they're pretty good too...the one I tried was too spicy though...

  5. Everything seems delicious, as always!
The tofu... the potato... the rice... the bean stew (would have been perfect for me with the spicy taste!) ... wow for everything!

Yesterday I went to a vegan restaurant for diner, and made ramen for super.
