...5.4...Over the Weekend...

...we had some storms blow through...again...such is spring in North Carolina...
...but the wind broke my pretty foxglove...
...but not the shamrock...which is still blooming nicely...
...and I only got two butternut squash plants in the small row I planted...
...I'm tickled to have them...and I may get more yet...
...later on Saturday afternoon...I cut up the cabbage we had gotten in our big online shopping...
... to make another half-gallon of sauerkraut...of course...
...we got the kosher salt in the shopping as well...and since we "allowed substitutions"...this is the kind we got instead of the kind we normally get...that's fine...this kind is just more expensive...and maybe they were out of the other kind...and I wear gloves for the massaging of the salt and cabbage...as it hurts my hands if I don't...
...and another successful batch of sauerkraut ferments on the counter...
...then on Sunday...the Man uploads his sermons on Saturday...but I don't watch them until Sunday morning...during 'regular' Church time...and I had a second cup of coffee...pretty rare for me...but delicious... ...after Church...I got out my new cookbook...
...actually...I went kinda crazy ordering cookbooks over the weekend...

...and bought all three of those kindle books on the top row...they were just a few dollars each...
...so this is the Banana Rabanada (Brazilian French Toast)...from Isa's Vegan Brunch...
...soaked some homemade bread in the mixture...
...both sides...
...and fried in a little bit of oil...
...flipped when crispy and golden brown...
...it made 6 slices...perfect for us...three each...
...and it really was perfect...
...crispy and moist and creamy...all the things French Toast should be...
...sprinkled with powdered sugar...and drizzled with Maple Syrup...

  1. Sounds like the French toast was perfect. I never get it quite right so I never make it. I am pretty boring when it comes to breakfast. Usually I have some type of cold cereal like Bran Flakes with or without raisins and some milk or milk substitute. for the first time in my life I made granola the other day. It is very good but I almost cooked it too long even though I cooked it for only half of the stipulated time. Ovens are so different. It looks like you will have fun for awhile with your new cookbooks.

  2. Funny about you ordering the cookbooks. I think I've seen a cabinet at your house full of cookbooks....I guess there are other recipes to conquer though! The toast looks wonderful! Love, K
