...4.5...Over the Weekend...

...of course...the main event over the weekend was Easter Sunday...

...don't know if I've mentioned it here before...but since we started having the socially distanced services again...I've been the only acolyte serving in the Chancel area with the Man...so this is just a snap from the service cameras of me lighting the candles...wearing my Easter Sweater...I'll do a proper update on W.I.P. Wednesday...
...and speaking of Easter...it was just the Man and I this year...which is odd...but we're getting used to it...and I'll do a post tomorrow about the Vegan Gigot...
...I did not do an InstaCart pickup this week...

...we had the Maundy Thursday service and then Good Friday...so there was no Dinner and a Movie this week...but when we got home from Church Friday evening...we made a quick pizza...and I mixed a perfectly delicious sauce...but I didn't write anything down...so it's unlikely that I'll be able to replicate it exactly...boo...
...and since the oven was on...I sliced some tofu to bake alongside the pizza...and I sliced a potato to top the pizza as well...
...not sure where I saw this idea...some YouTube video probably...
...baked tofu ready for the fridge...
...and I thought the pizza was good...the Man says he'll forego potato pizza in the future...haha...
...other than the vegan lamb...I made a vegan Carrot cake...using a boxed mix...mixed my ground flaxseed with some aqua faba for the eggs...
...carefully greased the pretty pan...
...and then floured it...I have a problem with cakes sticking to this pan...so I'm really careful to make sure every mm is covered...
...and I used applesauce for the oil...
...and then just mixed up the cake mix and poured it in the pan...easie peasie...
...baked...
...and a perfect unmolding this time...

  2. The inability to replicate awesome creations exactly is one of the hazards of being a good make-it-up-as-you-go cook. Though they're the best kinds of cooks, if you ask me. I'm glad you had a nice Easter--and your festive sweater looks good!

  5. I love the bundt pan designs and your Easter sweater. The potato pizza looks good. I like a pizza with garlicky potatoes.

      ...I love that pan too...just not greasing it or cleaning it haha...I liked the potatoes on the pizza...I'll probably do it again...and your idea of garlicky ones is even better!
