...9.16...What I Ate in a Day...as a Vegan...

...for breakfast...I toasted a vegan biscuit...
...and had some pineapple jam with that...it was delicious...
...and a little bit later...I had a bowl of vegan yogurt topped with some flaxseed and some blackberries...and some tea...
...and I had a cupful of that delicious homemade tomato juice we were given...so delicious...seriously I could drink a quart...
...for lunch I cut up a pepper...and then just ate some leftovers microwaved in the jars they were stored in...easie-peasie...and I love using up leftovers...and I had a fresh lime so I juiced that and made lime water...so that's about 1/4 cup of black beans...and some steamed squash...and a little bit of vegan stuffing or dressing...actually leftover in the freezer from Thanksgiving...last year...haha...
...then I had some fruit in the afternoon...a less than stellar store-bought nectarine...and a good orange...
...and then dinner was some of the Man's delicious spaghetti...bread and a salad...

...so all in all a pretty nondescript day...

...what did you eat yesterday?...

~Have a lovely day!

  2. Pineapple jam sounds good. I've never had it. The spaghetti is making me hungry but tonight we're having roasted cauliflower and some wonderful, baked breaded basa fish. Enjoy your evening. xx

...I like the dim sum effect of eating up little bits of leftovers...and I like the frugality of it too...
