...11.11...What I Ate in a Day...as a Vegan...

...y'all may be tired of reading about my Everything bagels and Violife cream cheese breakfast...but obviously I'm not tired of eating them...haha...
...Éphée had made a plain cheese sammie that inspired this snack...using up some of that 'tough' sandwich bread I had made last week...
...lunch was mostly from the freezer...bean soup, green beans (actually leftover)...and the squash was a gift earlier in the summer...but it was too large for what we normally use...so I cut it up and scooped out most of the big seeds and froze it...then I just microwaved it with some onions...it was still a little bit tough...but it was yummy and summery...and I had half of a cucumber and a boughten tomato...
...for dinner we had some corn on the cob from the freezer too...and I cut mine off the cob...
...and just had that with a veggie burger...
...and I snacked on half of a cucumber with some Zesty Italian dressing while we were making dinner...

  1. I’ve been having trouble posting comments to your blog. So if you get this twice you’ll know why. I made some lovely curry with chickpeas over rice for dinner last night. My refrigerator has gotten a bit too cold in all this chilly weather, and I in advertently froze a bag of carrots. I peeled all of those chopped them up and we had lots of carrots in our curry! That was good though it made it nice and sweet. I’ll have curry for the next couple of nights because as usual I made way too much! Love,Karen

      ...not this time...but I have gotten two in the past...blogger can be pretty flaky sometimes...I love carrots in curry too...it's a good combo...

  2. Matt made French Onion Soup this week and we've eaten it two swoonworthy times. Oh, so good! (And I don't know how anyone could ever tire of eating bagels!)

  3. It's good you enjoy eating same foods on multiple days as that can make it easier to prepare one's food. I find it hard at this time of year to know what to eat. If I eat lightly I'm too cold so I need heavier foods which I don't really like to eat (I like but I try to reduce this kind) but that's how it goes.

      ...definitely love a good bagel...we still have quite a few pints of corn in the freezer...it's like a bright bowl of sunshine everytime I get one out...
