...4.7...What I Ate in a Day...as a Vegan...

...it's been rainy (really rainy) here...so the pictures are kind of dreary...
...for breakfast I had an everything bagel...surprise...I know...for some reason I always have a problem with the lid on my Violife cream cheese...so I have to keep a rubber band around it...don't know why the lid doesn't snap on securely...
...anywhoo...I love vegan bagels and cream cheese...
...mid-morning snack was an apple and some nuts...I know that's another big surprise...not...
...remember my single little harvest of Butternut Squash...it's been sitting on the counter since October...and the Man asked me if I was ever going to cook it...so I did...HA...and he said he didn't want it savoury...so I split it in half and filled his half with brown sugar and Earth Balance...and peeled and cubed the other half...coated it in olive oil and sprinkled it with rosemary...because given the choice I will almost always choose savoury over sweet...
...and of course...I roasted the squash seeds along with the squash...here's how I do that...they may be my favorite part of the squash...no...it's probably a tie...
...and here's the roasted squash...which we had with TVP chili and grits for lunch...
....but you'll have to imagine that on the tray...because for some reason I took the photo without putting the dish on the tray...

...or maybe I did take the photo and it was lost...my camera gave me a funny message...something about error writing data...OK to recover...well...I chose OK...but there were a bunch of photos missing...

...I put an entire bag of frozen cauliflower on my Griddler...and I took a bunch of photos...because it shrank down to barely a small serving ...the Man and I were amazed...and he said I could have it all...
...so this is an ENTIRE bag of frozen cauliflower...in one small bowl...

...I doused it with vegan Buffalo Wing sauce...or sprinkled is more the correct term as I didn't want it to be too hot...
...and then I used a new to me recipe for vegan mayo...it uses clear gel...I'll have to make it again...and take some more photos...and then made that into a ranch dressing...
...and then I made this one pan quinoa...and took a bunch of photos of that process...it's this one from Nyssa's kitchen...not sure where I got the link for it...so that made a delicious dinner...and it was all done ahead of time...before Church...
...and then when we got home...it was after 8 ...so we just had some popcorn while we were watching the latest episode of Vera...

...I've just been putting the popcorn kernels in a bowl...and setting a plate on top...and then microwaving until it stops popping...it's so easy...and there's exactly one ingredient...popcorn...

...my camera seems to be working fine now...but I lost an entire afternoon of pics...oh well...

  1. Interesting, I assume cauliflower is almost all water! My eating yesterday was weird - everything bagel for breakfast, leftover curry/rice for lunch while underway then just copious amounts of snacks when we visited the other boats. Yummy olives, cheese/crackers, brownies and another cake that I have no idea about the ingredients. By the time we were back at our boat it was 9pm and we weren't hungry. Love, K

  2. for some reason I have never thought to roast butternut squash seeds...hmm. Looks so good and you give me good ideas :)

      ...I absolutely love pumpkin/squash seeds...and I always roast them along with the squash...
