...Friday Favorites...a Visit with Mom...

...Mom had been on one of her round robin trips to visit her brother...her step daughter and brothers-in-law...and then she stopped by my sweet sissie's for dinner...and then came here...
...and she showed me a couple of photos they had taken there...this one is just a typical Mom & Daughter shot...and Duane said TWINS when he took the photo...
...so then Karen went and got glasses and stooped down a bit so they'd be the same height and took another one...and they are indeed TWINS...haha...
...so I did the same thing...natch...I put on a t-shirt tie-dyed by my Sissie...and this is a 'normal' Mom & Daughter photo...
...and this is my #Twinning one...but you can see that I don't look nearly as much like Mom as Sissie does...

...and that's funny because when we were growing up EVERYONE always commented on how much I looked like Mom...and indeed there are pictures of us both as children and I did look a lot like her as a child...but now...not so much...Karen looks much more like her now...
...and I packed up Sissie's birthday present and the card we send back and forth each year...I'll show you everything next week once I'm sure she's opened it..
...for breakfast with Mom...I made these gorgeous and delicious Fat-Free Vegan Sugar-Free Orange Cranberry Muffins...and you know how I 'document' things here on the blog so that I can make them again...haha...
...they are so perfect...and they made the house smell like Christmas...I used to make an Orange Cranberry Bread in the breadmaker on Christmas morning...I started it first thing and then it baked while we were opening presents...this is much quicker...
...we just moved the puzzle to the end of the table...you can do that with family you know...haha...you can see a little bit of the progress here...the edges are all done...
...oh so good...

Vegan Fat-Free/Sugar-Free Orange Cranberry Muffins

2 cups all-purpose flour, sifted
1 ½ tsp baking powder
½ tsp salt
½ tsp baking soda
⅓ cup Stevia...the kind that measures the same as sugar...
1 Tbsp orange zest
½ cup orange juice...I just juiced the orange that I'd grated the zest from...
¼ cup unsweetened applesauce
1 tsp vanilla extract
½ cup almond milk
½ cup dried cranberries

1. Preheat oven to 375° F.
2. Prepare muffin tin by greasing generously with Earth Balance...you can, of course use paper linings...but the crust on these muffins is amazing...and I guess if you want them to be completely fat-free you'd have to use the liners or a non stick pan...
3. In a large bowl, add flour, baking powder, salt and baking soda. Mix together with a fork.
4. In a separate bowl, whisk together orange zest and juice, applesauce, vanilla and almond milk.
5. Stir the wet mixture into the flour mixture until just combined.
6. Fold in cranberries.
7. Fill each muffin cup about ¾-full.
8. Bake until golden and a toothpick comes out clean (20–25 minutes).

Makes 8 muffins.
