...I had bookmarked Sadia's Aush Reshteh recipe a while ago...on her YouTube channel it's called High protein anti-inflammatory noodle soup (aush reshteh)...and she says that she ate it all the time growing up...
...there is quite a bit of prep...you need to soak your chickpeas, kidney beans, lentils and mung beans overnight...
...then the next day...chopping onions...
...parsley and cilantro...
....and spinach...and gathering spices...just mint and turmeric...
...cooking the onions...
...until lightly golden...
...then you add everything to the pot...
...noodles...
...and greens...
...cook until everything is done...
...and serve garnished with some of the onion/spice mixture...
...this really was a nice hearty soup...and it's definitely been soup weather...
