...Southern Comfort...Food...

...after all that camp food...I wanted some good down home southern comfort food...

...some yellow-eyed beans...the first I've seen up here...so I snatched them up...got them soaking...

...threw in some carrots onions and celery...and let them cook...a long long time...they smell so good...

...in the meantime...I made the Mac & Shews from PPK...

...really so very creamy...

...and good...I can't believe that I waited this long to try it...

...and I plated all of that goodness with some Seitan Ham...

...it was exactly what I was craving...

...and it really hit the spot...

...what's your favorite comfort food?...

  4. Macaroni, cheese and tomatoes, this is my comfort dish. My grandfather was in the Royal Air Force and was stationed in India in the 1930's when my father was born.

    Surprisingly, this is an Indian dish that was brought back by my grandmother and enjoyed by my father.

    It is very simple. Macaroni (or any pasta), cooked and layered in a dish with tinned tomatoes and cheese. Finish with cheese and grill.

    If I'm having medical treatment that I'm not looking forward too I make this beforehand and either freeze it or put it into the fridge. All it needs then is 30 minutes in a hot oven.

  6. Yellow-eyed peas?! Wow. Your meal looks great. I think sweet potato pie and bread pudding are my fave comfort foods.

  7. Is that macaroni is a skillet! It looks so good! My favorite comfort food is dumplings! I love them on a chilly fall day.
