...hello everyone...
...my longtime internet friend Kim...has jumped on the What I Ate Yesterday bandwagon...so hop over to Kim's Cooking Frenzy...and check it out...she's not vegan...but she eats a pretty healthy and easily vegan-izable diet...I get lots of inspiration from her blog...
...and like me...she also has a knitting blog...Kim's Knitting Korner...
...I started off the day with some water with a couple of teaspoons of apple cider vinegar...like I always do...and followed that up with some matcha...
...I don't think I've ever shown y'all the supplements I take...
...the humongous vegan multi is the golden one...and then I still take a calcium and a Vitamin D...
...when this rather large bottle is gone...I'll be looking for a smaller multi...so if you know of a good vegan multi that's small and easier to swallow...let me know...
...and today's episode of W.I.A.Y required a little bit of prep work...
...I had made some almond milk...
...and saved the meal leftover from straining the milk...like I always do...
...a single batch yields about 1/3 cup of leftover almond meal...
...so I freeze it twice...and then I get it out and add it to a fresh batch...and I have a cup of leftover almond meal...
...I let it thaw and mix it all together...
...and add enough almond milk back to it to make it a cream cheese consistency...
...and then I add a probiotic capsule to the almond meal...and leave it overnight...if your house is warm you can probably leave it on the counter...but I leave mine in the oven with the light on...
...I also add 1 tsp of lemon juice...and one tsp of sauerkraut liquid...for a little bit of added depth of flavor and tartness...
...and put it into a tub for storage...and in the morning you'll have perfectly creamy and tangy vegan cream cheese...
...perfect for topping a toasted bagel...
Breakfast - Toasted plain vegan bagel with leftover almond meal probiotic cream cheese...
...and since that wasn't a huge breakfast...I got hungry before lunch...so I made a little...
Snack - Tomato and cucumber...
Lunch - leftover refried beans and mexican rice...
Dinner - Vegan Ham - (if you want the recipe - email me and I'll send it to you...it's not mine so I can't post it here...), Roasted Butternut Squash - recipe here, Brussels Sprouts, Dinner Roll...
