...Mung Beans...and a movie...

...I had gotten this bag of Mung Beans at the Asian Market...sort of with the intention of sprouting them...as that's really the only way I've ever eaten Mung Beans...

...but a quick internet search gave me a few other options...

...and I chose this rather mild mung bean soup recipe from Food.com...
...so...I washed the Mung Beans several times...and left them to soak overnight...
...the next morning they had plumped up nicely...
...so I drained them and added them to a big pot with a quart of fresh water...
...chopped up an onion...
...smashed some garlic...3 cloves...
...and added some red pepper flakes...the recipe called for chilis...but I didn't have any...
...and then added the Vegan Chicken Broth...
...and cooked until everything was nice and tender...
...and finally added the spinach...
...just tossed it in frozen...
...and oh my goodness...this simple soup is so delicious...
...and then to go with it...I had bookmarked Susan Voisin's Crispy Fat Free Spanish Potatoes...

...and just followed the recipe...they are spicy...so next time I'll probably cut back on the cayenne a bit...but they are really crispy and nice...and a perfect complement for the soup...

...on the "TV Tray"...ready for the movie...

...so basically...I threw all of this into a big pot...well...I added the spinach right at the end...

Heart Vegan Whole Mung Bean Stew

2 cups whole mung beans, picked over, washed, and drained
4 cups water
3 garlic cloves, finely minced
1 Tbsp Red Chili Flakes
1 onion, finely chopped
3 cups vegan chick'n stock...I used Orrington Farms Chicken Flavored Broth powder...
10 ounces frozen spinach (thawing is not necessary)
salt and pepper, to taste

...and the 'movie'...again...was really a couple more episodes of Indian Summers...

...I really do see why people 'binge-watch' series like this...each episode kinda ends with a cliff hanger...so you're anxious to watch the next one...and they're all already available...so it really is tempting...

...but in the end...the need for sleep won out...

  1. I've not used mung beans in an actual dish like that. I've only used them to sprout...ill have to try that.

    Last night Duane and I watched the Spiderwick Chronicles on Netflix. Nice monster family movie! Love, K

    Last dinner and movie was "Please Like Me" but it ended up without the dinner which we had after because we were all obsessed by the serie ;-)
