...W.I.A.Y. ...

Breakfast - Vegan 2 Ingredient Biscuit...with vegan cheese...
...this is a sammich that I've been loving recently...
...Mom made one like it for me on my most recent visit up there...
Lunch - Tofu Sandwich with lettuce, tomato, and Dijon mustard...
...I blended up a couple of frozen bananas and PB2...
Snack - Banana N'ice Cream...
...we've been having absolutely gorgeous spring weather...
...and everyone...including Jack...loves to be outside...and the Man smoked some more tofu...
...so we had traditional BBQ sides...baked beans and potato salad...
...and the mayo on the potato salad is this amazing fat free mayo from Cooking with Plants...

Dinner - Smoked Tofu, Vegetarian Baked Beans, corn on the cob, and Potato Salad...

  1. since we were super-busy with our shoreline repair yesterday, we didn't even stop for a snack at lunchtime! just breakfast of the usual omelette and then we went to the local pizza place for their $1 drafts and fabulous greek pizza with to-die-for kalamata olives! love, k
