...Holiday Monday...

...since it's a Holiday (Martin Luther King Jr. Day here)...and everyone has the day off...we made plans for a special breakfast and also a special lunch...

...these muffins are just my basic muffin recipe but instead of blueberries...I made a quick streusel with some brown sugar...flour and pecans...
...so I put one small scoop of batter in each muffin cup...
...then a scoop of streusel...
...and then topped with more batter...
...and finally sprinkled some streusel on top...
...they turned out so perfectly...and they were delicious with coffee...like mini coffee cakes...

...this is my muffin recipe...it's an old recipe from a Betty Crocker Cookbook - easily veganized:

3/4 cup milk - I used homemade almond milk
1/2 cup oil - but I used applesauce instead - your pick
1 egg equivalent - I used flaxseed goo
2 cups all purpose flour
1/3 cup sugar - I used brown sugar this time
3 teaspoon baking powder
1 teaspoon salt
...instead of blueberries this time...I made this streusel...

1/2 cup brown sugar
1/2 cup chopped pecans
1/4 cup flour

Heat oven to 400°. I used paper muffin cups this time...but I actually prefer to grease the muffin cups and have that little bit of crust on each muffin...you don't get that with the papers....

...and you can easily sub self rising flour...just omit the salt and baking powder...

...and then we made plans for lunch...all of us...Scout and Our Girl and the Man...and my dear old friend Amy and her husband were all going to meet at a new-ish Noodle place that none of us had tried...but before lunch 'things' came up for several of us...and it wound up just being me and Amy...and that was fine too...I took a photo of my wide noodle lunch with my phone...but for some reason it's almost all black...weird...just the top of the plate...it was delicious too...
