...breakfast was a green smoothie...
...mid-morning snack was cantaloupe...
...lunch was garbanzo bean "tuna" salad...just smashed beans with homemade vegan mayo and sweet relish...oh...and some nori granules for a bit of the flavor of the sea...
...with some carrot and cucumber...
...afternoon snack...cucumber tomato and carrot...
...we're having a kid-friendly 'meal' before Vacation Bible School each evening...and last night's menu was corn dogs...I have made vegan corn dogs before...but they are a bit of trouble...
...so I gathered the ingredients for some vegan corndog muffins...
2⁄3 cup all-purpose flour
1⁄2 cup yellow cornmeal
1⁄4 cup granulated sugar
1 tablespoon aluminum free baking powder
1⁄2 teaspoon salt
1 flax egg - 1 tablespoon ground flax seed and 3 tablespoons of water - let sit until gloopy...
1 cup vegan buttermilk - added 1 teaspoon of apple cider vinegar to 1 cup of almond milk...
...cut 2 veggie dogs into 8 piecese
...fill 16 mini muffin cups half full with the batter...
...gently press a piece of veggie dog into each muffin cup...
...bake until golden...I had 4 muffin cups with just muffins...
...and you'll have a plate full of these adorable little veggie corn dog muffins...
...they were really good and fun to eat...

Delete...they were definitely yummy...that cornbread mix is a lot like jiffy...if you like sweet cornbread...it's perfect and chewy for these muffins...
