...we had just gotten home from our quick trip to the mountains...and we slept rather late on this July 4th...and normally I'd get up and make a bunch of pancakes or waffles...but everyone was kind-of slow to get started...
...so I just went with smoothies instead...
...cranberry...kale...flax...lemon...blueberry...
...that was a delicious energizing start...
...then for lunch...these delicious garden ripened tomatoes had appeared on our doorstep...
...so we sliced a few of those to make some tomato sandwiches...Julia Child's homemade mayo here...
...then the Man (aka...Gourmet Chef)...found this vegan chimichurri recipe...Steak Gaucho-Style with Argentinian Chimichurri Sauce...
...so...he whipped that up...
...and then we started prepping for the Holiday dinner...
...Whole Wheat Pain d'epi...
...shaped...
...and baked...
...to go with our Argentinian veggie burgers I made some oversized stuffed burritos...
...filled with rice, black beans, corn, and tofu...
...and vegan cheese...of course...
...then it was time to grill...
...just spread on the sauce...
...we had extra...I'm going to freeze it for later...
...the burritos were done at exactly the right time...
...my overstuffed plate...the burrito could have been a meal by itself...
...and the Chimichurri Veggie Burger was so delicious...
...and our Red-White-&-Blue dessert...vegan vanilla pudding with fresh strawberries and blueberries...
...what did you eat on the 4th?...

that all looks neat. well, the 4th was just another day for us since all the fireworks and parades around here were on the weekend. we did chores getting ready to take the boat for the new engines. haha, so we had leftovers, nothing exciting. but i did bake brownies and made some of Nanny's cornbread to take to the "road work" potluck on July 5th.
