...it was just a weird snacky kind of day...in which I did not sit down at the table and eat a proper meal at all...
...one of our gardening parishoners brought us a big old fashioned seeded watermelon...
...I put it in the sink and cut it in half...
...and then sliced off a thick ring of watermelon...
...quartered it...
...and we'll call that breakfast...and it was delicious...
..I just covered the cut ends of the halves with my silicone bowl covers...the work so well for this... and put them into the fridge...
...lunch was just a tomato sammie...and I was out of vegan mayo again...so I just whipped some up...
...guess what I snacked on...
...that's right...more watermelon...and tea...
....later...some hummus...and tea...
...I ate one of the aptly named 'graze' snacks...
...it was spicy and yummy...
...and I really had been grazing all day...
...so then for a snacky dinner...I got some of my homemade mozzarella out of the freezer...along with some vegan pepperoni...
...and made a quick single server pizza...
...and we'll call that dinner...haha...
...I don't often eat like this...and certainly not a whole day of it...but most of my snacks were pretty healthy ones...
...what did you eat yesterday?...I bet you didn't snack all day...

Looks like you had some lovely snacks. I made roasted chicken thighs with mushrooms in rice yesterday for dinner. I had some for lunch today.
ReplyDeleteI worked a little with Richard at the airport - so I took vegan stuff. Started the day with a bagel, Earth Balance and jelly. For lunch we had soy-sauce marinated fried tofu sandwiches and a macaroni salad I had made with the Helman's vegan may, relish, frozen green peas, and green olives. All quite yummy! Dinner was at Mom's....delicious! Love, K
