...Breakfast was my usual bowl of cereal, fruit and almond milk...
...and that didn't last for long and I had an early lunch around 11...I got a bag of frozen individual servings of brown rice out of the freezer...
...and then I just cut up some tomato and mixed that into the thawed/heated rice...
...many years ago when we lived in South Carolina...we had an African-American friend who had grown up poor...and she once told me that they often had rice with tomatoes for a meal when she was little...sadly...she is no longer with us...but I remember her telling this story and how good she thought this was...
...this is actually the first time I've ever made this simple dish...and I really like it...it's just rice and tomatoes...she called it 'Maters and Rice...
...I had that with some defrosted garbanzo beans from the freezer...and some Bread and Butter pickles...after I took the photo I stired some crumbled Nori into the garbanzos too...
...I know I said I wasn't snacking...but I was hungry after noon...so I heated up this little bit of leftover edamame...it was not much of a snack but it was good...
...for dinner...the last of green tomatoes had started to ripen...but that didn't stop me from 'frying' them up in the Foreman Grill...
...made a small cake of vegan cornbread...
...sliced into a slice and filled it with Earth Balance...
...steamed some squash and onions...
...and heated up a couple of muffin cups of beans from the freezer...
...what did you eat yesterday?...

hi! yesterday, i had granola with blueberries and almond milk. i had hashbrowns with a scrambled egg adn avocado. i had respberries and monster cookies while i was making them for the football team. i had taco salad. and i had one more monster cookie.

I believe I was actually vegan all day yesterday. Bran cereal, apples and almond milk for breakfast, a huge plate of steamed (previously frozen) brussels sprouts and green beans sprinkled with the "greens seasoning" for lunch and a big bowl of spaghetti with marinara sauce for supper. And a few mint oreos while watching a couple of episodes of Doc Martin. Your food looks yummy and healthy as usual! Love, K
ReplyDeleteWhen I was a child we had two meals for when we had no money. One was potatoes and onions boiled together, the liquid thickened and seasoned. The other was fried onions with bread. We always seemed to have onions but not always potatoes or bread!
