...8.12...What I Ate in a Day...as a Vegan...

...for breakfast...I had some Violife mozzarella toasted on some french bread...I used to have this for breakfast all the time when I was teaching...not sure why I don't have it more often...
...a little bit later in the morning...I had a cup of homemade vegan yogurt with some bran flakes stirred in...
...lunch was a vegan Reuben...made with some of that pâté I made last weekend...and a gifted homegrown tomato...when we lived in Balsam Grove all those years ago...there was a café in Brevard...across from the college...that made a vegan Reuban with tomato like that...it was yummy...
...and I made some microwave potato chips to go with that...
...and dinner...was BBQ tofu...a big bowl of coleslaw...corn on the cob...and Foreman grilled yellow squash and sweet potato...

...what did you eat yesterday?...

  1. wow that supper looks wonderful!! I didn't have breakfast - had a cold veggie plate with ranch dip for lunch and spaghetti for dinner. Not very exciting. Love, K

    Yesterday... i made a boulgour salad with "chorizo carrots" on top.
