...there's this YouTube channel that we watch...called Glen and Friends...
...and I think he posts every Sunday morning...about some recipe he's tried from an old cookbook...they are rarely vegan...but I often veganize things he's shown on his channel...
...and this recipe is vegetarian...but quite easily veganized...
...it's a recipe from this 1943 booklet...
...basically you'll only need vegan milk and vegan eggs to make these patties...
...and except for the Grape Nuts I had everything on hand...I'm using almond milk for the milk and aqua faba for the eggs...btw...Grape Nuts are really expensive...
...I cooked the lentils...
...and started pressing them through a sieve...but decided that was too much work...haha...
...so I got out my trusty potato ricer...and smashed them through that instead...
...I left some whole for a bit more texture...and I'm not sure that you really need to mash them at all...
...this was the semi-mashed texture I ended up with...
...then I added the ingredients in the order given...not sure how you measure the almond milk...as the recipe says to add enough to equal a 1/4 cup...but I had already mashed the lentils...and there wasn't really any liquid left to 'add' it to...so I just added a quarter of a cup...
...and then I added the Grape Nuts...
...it was a nice scoopable texture...
...formed it into patties...
...dredged in flour...
...and fried in oil...
...they browned up nicely...
...they turned out perfect...and I had one little half/baby one...
...on a vegan probiotic yogurt biscuit...
...they were absolutely perfect...
...and the rest went into the freezer for later...they'll be perfect for quick breakfasts when we need them...or to go along side our pancakes...

Sounds good--I love a sausage patty, especially on a biscuit! That's interesting with the Grape Nuts. That's new to me.
