...3.3...What I Ate in a Day...as a Vegan...

...for breakfast...of course I had one of those Mock Sausage Patties...made with Grape Nuts...on a vegan probiotic two ingredient biscuit...this is how I make the yogurt...and then I just add that to the self rising flour...this is how I make an aluminum free self rising flour...so easy and delicious...
...and then for lunch I ate up the Mexican leftovers...with some of the cauliflower cheese sauce that I love...
...for dinner...I got out the grill/griddle...and made some sweet potato...
...perfectly carmelized...
...and we had that with baked tofu...cranberry sauce...chick'un gravy...and broccoli...it should have been a dining room meal...but we ate it from trays in the den...watching television...haha...
...a couple of snacks...an apple with some of the black walnuts leftover from making the Man's brownies...they are really yummy with an apple...and I also like them in salads...just not so much in brownies...
...and then this is my trick for making jarred salsa better...(another one of my hockey pucks from the freezer...haha)it's a little muffin cup of frozen chopped cilantro...
...and I just zap it in the microwave for a few seconds to thaw it out...but not to cook it...
...and then I mix in the 'boughten' salsa...
...and it makes it so much more delicious...and I don't always have to have fresh cilantro on hand...

  1. YUM!!! I put the "sausage" patty recipe in my Pinterest. If I can get a good deal on Grape Nuts, it's on! :)

      ...I recommend the sausage patties...the only change I'd make is to add more sage next time...and I've got quite a bit of the grape nuts left...so I'll definitely make them again...

A bagel, cream cheese and orange marmalade for bfast, for lunch a veggie sandwich made with a wonderful sourdough bread that Dee from Meshugga gave me because my oven is broken, and for dinner we head the fresh mahi with salad, hush puppies and beans/rice. And banana pudding for desert. Interestingly - the South Africans on Meshugga call most any dessert "pudding". We joke about it, so it was particularly funny when I did, indeed serve them pudding.   3. I have been on a huge black walnut kick (raw), I have a handful every day and they taste perfectly!!

      ...I love them raw too...and I've used them in some of my Julia Child recipes as a sub for liver based things...they have that earthy/irony sort of taste to me...
