...so let's start with the Pie...this is the recipe from our old 1812 cookbook...that has applesauce (sort of - you cook the trimmnings of the apples) as a sort of thickener...we love it...
...other than that...it's a pretty regular pie recipe...
...I use my little pie crust shields...
...to keep the crust from getting too brown during the rather long baking time...
...and then cut a generous slice...
...and serve with tea...it was so delicious...I think every day should be a pie day...
...what better way to celebrate Pi(e) day...
...but before that...over the weekend...we had buckwheat pancakes again...still haven't remembered to ask Mom about the Buckwheat Pancakes we had when I was little...maybe she'll post about it...haha...
****UPDATE***I was chatting with Mom yesterday...and rather uninterestingly...she said she thought the buckwheat pancakes we had came from a mix she got at the grocery store...hahahahaha...so that was rather anticlimactic...
...very delicious way to start the weekend...with a vegan Grape Nuts Sausage patty and maple syrup...
...we picked up the InstaCart...
...mostly fresh veg this time...of note...we did not get any Silk...
...and for 2 lbs. of carrots...we got two one pound bags...but at least they're normal sized this time...
...and I requested 2 (two) jalepeƱos...and I got 2 lbs. ...haha...oh well...into the freezer with those...
...I soaked some soybeans...and rubbed them really well...I've read that it's the skins that make the milk 'beany' tasting...but if you rub them well the little skins will float away...
...and there are a lot of little skins...you don't have to get them all...just most of them...
...little skinless soybeans...awwww...
...and then I cooked a pound of Mayacoba beans...
...mainly because of their creamy texture...they make a lovely chocolate hummus...here's how I make that...
...and then I mixed a probiotic tablet in with the soymilk...
...and left it overnight...in my trusty Deva Bridge yogurt maker...
...and this is what it looks like the next morning...perfectly edible...and tangy and delicious just like this...
...but I almost always put it in cheesecloth and let it drip...
...I just prefer my vegan yogurt on the thicker side...
...and I let it drip...until it is reduced in volume to about half...
...this is more the texture that I want...
...the Deva Bridge Yogurt maker makes a quart of yogurt...so when it's dripped long enough to fill up a pint jar...that's about the right texture for me...
...and I keep the vegan 'whey' and use it to make cornbread and biscuits and such...it's just like buttermilk in those applications...
...in addition...books got read...sweaters got knit...floors got vacuumed...clothes got washed...bicycles were ridden...and all of the other regular weekend things...
...I finished Almost American Girl...and started and have almost finished The Shop on Blossom Street - we had to choose a 'romance' with a main character over 40...I don't read romance novels very much at all...but this one has the bonus of being set in a knitting shop...and all of the female characters come together for a knitting group...it's really pretty predictable...

Everything looks delicious and I love the simplicity of the Apple Pie recipe. So much better than looking up recipes on line and then being faced with pages of explanations before you ever get to the recipe. I'll check out the books. They sound interesting. Happy week ahead.
