What do you do when you have one banana left on the counter - getting too ripe...
...well, you make a nice little single serving of Southern Banana Pudding with it - of course...
I love Banana Pudding - the boys - not so much - oh they'll eat it but they don't love/love/love it like I do...
Southern Style Vegan Banana Pudding for One
1 cup soy milk
1 Tablespoon sugar
1/4 teaspoon vanilla
1 Tablespoon cornstarch
1 quick sprinkle of salt
That's it - mix it all up in a pot - bring to a boil until thickened. Arrange your banana and vanilla wafers in a dish and pour the hot pudding over the top - then refrigerate until cool.
That's my pretty little Philbe dish it matches the larger one I got for Christmas...

ReplyDeleteI should have mentioned that - they are Vanilla Wafers - they're quite common here in the States.
i never would have thought about making banana pudding in the middle of winter....but that actually sounds very "comforting".

ReplyDeleteVegan ones can be hard to find - they have them in a cello package at the health food store...
