Banana Pudding

What do you do when you have one banana left on the counter - getting too ripe...
...well, you make a nice little single serving of Southern Banana Pudding with it - of course...

I love Banana Pudding - the boys - not so much - oh they'll eat it but they don't love/love/love it like I do...

Southern Style Vegan Banana Pudding for One

1 cup soy milk
1 Tablespoon sugar
1/4 teaspoon vanilla
1 Tablespoon cornstarch
1 quick sprinkle of salt

That's it - mix it all up in a pot - bring to a boil until thickened. Arrange your banana and vanilla wafers in a dish and pour the hot pudding over the top - then refrigerate until cool.
That's my pretty little Philbe dish it matches the larger one I got for Christmas...

  1. Can't let that banana go to waste. That actually looks like a couple of servings to me. Enjoy, MOM

  2. I might have to make that for my husband, he loves bananas! I like them, but not as much as he does :)

  3. mmm, that looks great - i love bananas so much i'm practically a monkey! but what are the things that look like jaffa cakes?

  4. Hi Weeseaweed,

I should have mentioned that - they are Vanilla Wafers - they're quite common here in the States.

  5. i never would have thought about making banana pudding in the middle of winter....but that actually sounds very "comforting".

we're just about thawed-out down here. it was a balmy 40 degrees today! i'm looking for 60 on friday!!

    happy puddin' & love, k

  6. never heard of vanilla wafers before, but they're vegan? sweet! i'm on a mission...

  7. Hi Weeseaweed,

Vegan ones can be hard to find - they have them in a cello package at the health food store...

  8. Geez, you make it sound and look so delicous! Now just a little grating of chocolate on top:-)
