...Vegan Cheesecake....and a movie...

...nothing spectacular on the dinner menu...I sliced up some colourful peppers...
...and grilled them in these neat little basket thingys...you get all the benefits of char-grill without the hassle...

...and we're really trying to soak up all these last days of summer...and the weather has been absolutely gorgeous...showing no sign at all of the looming hurricane...it makes you wonder what people did 100 years ago when a hurricane was coming...I guess they just didn't know...
...served with tofu (of course)...broccoli soup...rice and a salad...
...now...starts the spectacular part...

...I made a delicious VEGAN Cheesecake...I started with some vegan graham crackers and Earth Balance...just blended up in the food processor to a fairly fine crumb...and I used our wooden sauerkraut/cabbage/plunger/packer thingy to pack it into the springform pan...
...perfectly smooth...
...gathered some vegan ingredients...
...blended them all up...and poured them on top of the crust...
...ready for the oven...
...baked at 350° F for about 45 minutes...
...ran a knife around the edge...
...and removed the pan...the cheesecake edge/crust is perfect...
...and the center is creamy and delicious...

Spectacular Vegan Baked New York Style Cheesecake

1 cup Vegan yogurt - I used my vegan probiotic yogurt...
2/3 cup cashews...you'll probably want to soak them if you don't have a Vitamix or a strong blender...the filling needs to be perfectly smooth and creamy...that said...I didn't soak mine...so I added 1/3 cup water...
1 tsp vanilla
2 Tbls Corn Starch
2 Tbls Sugar
2 Tbls Agave - that's Maple Syrup in the photo...but I thought better of it when I smelled the open syrup and went with the more neutral Agave...but feel free to use Maple Syrup if you want...
1/4 tsp salt

Method:
...just blend everything up and pour into a prepared crust of your choice...

...so that was delicious...

...and the movie...well...it was my turn and I chose Me Before You...a real tear-jerker...with a bittersweet ending...which I kind of enjoyed... ...parts of it were funny...and touching and sweet...and parts of it weren't...so...like life...it's really just a story about some people...the Man was not a fan...

...so...the Man's turn next week...but give me some ideas for the next time it's my turn please...

  2. I'm not sure what kind of movies you like. I would recommend "The Two Faces of January", a suspenseful thriller set in 1960s Greece. The scenery and feel of the movie is most enjoyable but please check out the movie first as it may not be your cup of tea.

  4. Miss Potter, Any film by Yasujirō Azu, I especially like the comedy 'Good Morning' but I love them all. They have the same actors in them, the post war films are the most noted.
