...we are still in Lent...but we don't have a meal during Holy Week...so this is just a regular ol' vegan day of eats...
...breakfast was tofu, tea, and toast...
...then I whipped up some of my tofu pudding...it's the filling for the amazing tofu pie...just without the crust...it's a really yummy pudding...
...lunch was a bowl of leftover beans with some leftover cornbread...some Foreman grilled veggies...and cucumber and tomato...and tea...of course...
...in the afternoon...I thought about making some microwave chips...but decided to make some crinkle cut fries instead...
...just baked in the oven...so yummy...I love potatoes as a snack...do you?...
...and then for dinner...I wanted vegan nachos...so I prepped a bunch of veggies...
...and assembled the nachos...
...easy and delicious...
...what did you eat yesterday?...

Yum, those crinkle fries look fun and the nachos too. I'll have to try that, but with baked tortillas instead....a bag of corn chips costs over $7 here! (It's hard to keep them fresh in the high humidity so the stores charge a lot).
