...when I first got up...after the water and vitamin routine...I had a rather large cup of my sweet brother's freshly ground coffee...and that kind of filled me up for bit...
...so a little bit later I had a toasted English muffin with some tofu (sprinkled with black salt and pepper) and topped with half a round slice of Daiya cheddar...and tea...
...then for elevensies...I made Mom's No Bake Cookies...
...yummy and nostalgic...
...then I wasn't really all that hungry for lunch...imagine that...so I chopped up some fresh tomato...
...mixed up a quick vegan ranch...using my homemade vegan mayo...
...and used that to top a baked potato...so yummy...sometimes I sprinkle bacon bits from the SDA store over it too...but not today...
...afternoon snack...was a bowl full of colourful veggies...baby carrots, some of those mini peppers, another tomato and a cucumber...and then a ltitle bit later I had that perfectly spotted banana...and the peach...
...the peaches that I'd gotten at the farmer's market are perfectly ripe right now...and I like my bananas spotted like this...tomorrow they will be too brown...and we'll probably freeze any that are left for smoothies...
...after my sweet sissie's visit...I froze the leftover sauce in muffin cups...and since neither the Man nor I were very hungry...I got a few of those out of the freezer...
...and made some noodles...and sprinkled on some nooch....of course...
and there you have it...another full day of vegan eats...

Buddy surprised us with a visit (he had helped a friend bring a boat up from Florida so he was in town). We went out to the local pub for mid-afternoon lunch and I got a Eggplant Parm sandwich with fresh fries. Hate to say it was mediocre. I added ketchup and it was much better. haha.

That was a nice surprise...I can sometimes get eggplant parm without the cheese...but usually not as they make it ahead of time...but I have been able to get the eggplant sandwich version more often because they don't...still have to ask about the breading though as they sometimes use egg for that...
