...4.9...What I Ate in a Day...as a Vegan...

...yesterday was one of those snack-y types of days...this self quarantine is kind of disorienting...I'm having a hard time keeping up with what day of the week it is...probably mostly because of missing Church on Sundays as that's pretty much the grounding point...
...I started the day with water and all my vitamins...and in the cupboard...we found a container of Tang...that we had bought for the kiddos to try last year...when we found out that they had never had the "astronaut's drink"...I don't think they were as impressed by it as we were as kids...so anyway...I'm just trying to use up everything like this that I find in the cabinet...and I'm just adding a couple of spoonfuls of the POM to it to use that up from the fridge as well...
...I keep most of my vegan staples on a lazy susan in the corner cabinet beside the dishwasher...and I found these two packets of opened fruit with just a few pieces of fruit inside...there were only 4 little figs in that bag...so I sprinkled it over some bran flakes with oats on top for a proper breakfast...
...and had that with some homemade almond milk...
...I got this vegan box of penne out of the same cabinet and made that...
...it turned out pretty good...so we're calling that lunch...
...I made a peanut butter and banana smoothie to go with it...we still have quite a few bananas in the freezer...but we're using them up at a pretty good pace too...
...that was delicious and very filling...
...and finally for lunch I made one of the Airman's miso soup packets that he left in the cabinet...and that was good too...there are two more of those up there...so I'll be having them soon...
...afternoon snack was one of the last three fresh apples and some nuts...and don't worry when I say last of something...because we still have LOTS of other food...

...and the drink with that is kind of a virgin pina colada...I had some coconut milk leftover in the fridge and I added a muffin cup of pineapple juice to it from the freezer...
...and then dinner was the only proper meal that I had...the soup is some of the old fashioned tomato soup from the freezer...and it tasted perfectly...but it kind of separated in the freezer...so I wouldn't recommend freezing that again...I had saltines in the soup...and some leftover sweet potato, green beans, and collards with that...and tea...of course..

  1. Everything looks yummy. I remember Tang as a child. That was in the days before orange concentrate or ready made OJ was popular. We kids liked Tang but I wouldn't drink it now, lol. I do love POM. It doesn't last more than a day or two in my home.

  2. I've had miso soup a lot lately too! Robert had given me bags and bags of it from the Asian store so I still have plenty. Duane tolerates it too (although I'm not sure he really likes it). Oatmeal and coconut bread for breakfast, but I didn't have any dried fruit to put in - I put a dollop of peanut butter. Love, K
