...Tuesdays with Julia...

...hop over to The Vegan Version to read the funny story of how I thought I was making one recipe and I was actually making another one...that I've already made...haha...

...anywhoo...

...I wanted to serve the sauce with some vegan chick'n seitan...
...so I mixed some vegan chick'n broth with some vital wheat gluten to make a dough...
...and then I thought I'd try adding a little bit of...I don't know what to call it really...but that stringiness that meat has...that allows you to pull it apart...seitan doesn't really have that...and I thought that incorporating a little bit of a 'stringy' vegetable that would kindof melt away might do the trick...so I steamed a little bit of cabbage...
...stretched the seitan out flat...or pretty flat anyway...
...pressed some of the steamed cabbage into it...
...and rolled it up tightly...
...shaped...
...and wrapped in foil...
...tightly...or so I thought...
...haha...as they baked...you can see that they burst their packet...
...I unwrapped them ...
...and then baked them a little bit longer...until they were nicely browned and slightly crispy...
...and then covered the slices with the Vegan Sauce Aurore...take two...

...oh...P.S. ...the cabbage worked well for making the seitan 'pullable'...I think I'm going to use the rest of it 'pulled' for BBQ sandwiches...

    I sometimes use sauerkraut in my seitan sausages, but I never thought of using it like this as a texturer! Bravo!
