...1.1...Dinner and a Movie...

...I think I may have mentionned the unseasonably warm weather we've been having...

...it's been a balmy 70° F (20° C) for over a week now...

...and while that makes for pretty perfect shirt-sleeved bike rides...it's not very seasonal...

...so even though it doesn't feel like New Year's Eve...it is...and we sat out in the backyard and watched a gorgeous sunset...

...and then for dinner we decided to make Mom's Lasagne...I've posted about it before...we all love Mom's Lasagne...and when I asked her for the recipe...this is what she sent me...hahahaha...it's the recipe from the box of Mueller's Lasagne noodles...

...Mom always used cottage cheese instead of ricotta...and so I make the ricotta recipe from the Uncheese Cookbook...but I cut the tofu into little cubes...you know...like cottage cheese...it's so delicious...I could eat it just as it is...

...and I use Grandma's Veg-O-Matic to make the little cubes...it's three passes through the blades...and super quick...

...I grated some Chao cheese...and got out the Violife mozzarella, some Daiya and the Violife Parmesan too...

...cooked and drained the noodles...

...and started layering it in the casserole...

...vegan sauce...noodles...and vegan cheese...

...x 3...

...the dish is pretty full...so I'll set it on a pan in case it bubbles over...

...perfectly baked to bubbly brownness...

...it was a delicious supper...

...and then for New Year's Eve we watched my favorite version of Scrooge...the 1970 musical one...since we somehow never found the time for it before Christmas...and then we watched the ball drop in New York...it was a fun quiet New Year's Eve...
