Veggie Sandwich 101
First - use your nifty mandoline to slice some seitan really thinly...
...then gather your ingredients - if you don't like hot pepper jelly - you don't have to use that....

Clapotis
I wore my Clapotis over my black funeral dress...
...to a funeral - the Man-Cub snapped a blurry photo as we were about to leave...
- this is the first time I've worn it out in public - I keep it at my desk and wear it when I get chilly.

The Creative Family
While we were in 'the city' we stopped at a Barnes and Noble and we happened to have the camera with us because we were going to Petco to buy the Man-Cub a Fire Bellied Newt (which they didn't have) when we do finally get one - he'll be named "Abdul" - so the Man-Cub snapped a photo of me with this book.

Vegan Alfredo
We did finally get around to making the Vegan Alfredo and we loved it. The Man-Cub said that it looked just the 'restaurant alfredo' - and he was right - more importantly - it tasted just like the restaurant stuff. Next time, I'll use the lower end amounts of salt and garlic, but it was very rich and tasty.
I did leave out the nutritional yeast as the Man hates it - I can't figure out why - next time he's away on a trip I'll make this for the Man-Cub and myself and we'll try it that way too - hehe. And I used homemade soymilk without any sugar (I usually add sugar to my soymilk so I made some special for this recipe).

Here's the recipe - it was really good - you should try it - you'll be surprised...
Vegan Alfredo Sauce
1/2c Earth Balance
2 cups unsweetened soymilk, with 3 tbsp set aside for the arrowroot powder
1 package Mori-Nu extra firm silken tofu
1-2 tsp apple cider vinegar (because I never have wine in the house...)
2 tbsp onion powder
2-3 tsp garlic powder
1-2 tsp sea salt
1-2 tsp black pepper (to taste)
pinch of nutmeg
1/2 cup Red Star nutritional yeast
2 tbsp arrowroot or cornstarch powder, dissolved in the 3 tbsp reserved soy milk
Combine all of the ingredients, except for the dissolved arrowroot powder, in a blender and mix on high until throughly combined. Transfer to a saucepan and bring to a low boil over medium heat. Whisk in arrowroot mixture and reduce heat to medium-low, whisking constantly to ensure no lumps form. Serve warm.
Note: If you have any leftover sauce, you may need to thin it with a little soy milk when reheating it.

Outside
We spent Saturday outside - it was so nice - about 42° F - just light jackets - the Man-Cub did ask to borrow my 'emergency gloves' (those little one size fits all gloves - I keep some spares tucked in the car/purse/shopping bag/etc. - just in case) so it was chilly but not freezing cold...
We saw this elk first thing - probably we hadn't yet made enough noise to frighten away all the wildlife...
I'm skittish about getting too close, but there were lots of trees to hide behind...
so we edged in for a closer view - and of course frightened her away...
The Prairie Dogs are another story - they get used to you pretty quickly...
...if you just sit still for a few minutes...
...they'll quit barking at you and go on about their business...
...there was no snow on this sunny hilltop...
I'm convinced that there is something hypnotic about a thawing lake - that makes you 'have to' see if the ice will bear your weight...
This is almost exactly where we walked across the lake ...
There are still drifts of snow in the shade...
...and the geese have no trouble walking on the ice...
This is another little pond (or slough) that is almost free of ice...
The Man-Cub saw some old tracks - of the wheeled variety - just some old indentions in the grass going up through the woods and wanted to follow them. We had never noticed this path before - but we walked up to this cement thing - right now it's full of snow melt - but we wandered around it trying to figure out what it is/was - a foundation to a building long gone - a cistern for a spring - a watering trough - there's always something mystical about coming upon an old homeplace in the woods...
...just some trees and open space...
...the big lake is still frozen of course - we even saw some ice-fisher-people still out on it...

Awww
The Man went to the local Home of Economy store the other day to get some hardware items - and came home with a little giftie for me...
I know - awww - isn't that sweet - they're salt shakers - a little Dutch boy and girl kissing - and the best part is that they have little magnets in their lips - so they stay together...
The Man-Cub discovered that if you put them just close enough together - they 'jump' to kiss each other - isn't physics great...

Brown Socks
I can't believe I just titled a post 'Brown Socks' - but I needed some brown socks...
I started these this past weekend while sitting around the pool watching the Man-Cub swim. I made good progress and I've just turned the heel. I'll finish the toe at Tae Kwon Do this week and hopefully start the second sock too.
This is Bernat's Cool Crochet in colour 74013 - Chocolat. The pattern is my old standby http://affectioknit.blogspot.com/2007/01/new-tkd-project-since-my-tkd-socks-are.html - and I think this is the first time I've ever made the pattern as written - I've always done 2 x 2 or 1 x 1 ribbing down to the ankle.

Snow People
The snow really is almost gone now - surviving only in the shade (I know -I know we could still get more snow).
The Man-Cub made some snow people to ride on his swings with the last of the snow - as it starts to melt it sticks together better...

A snowy weekend
We went to Fargo for a convention (only the Man actually had meetings - the Man-Cub and I just played)...
We stayed at a big all inclusive hotel - that had a huge play/pool area and restaurants in the hotel as the Man-Cub and I wouldn't have any transportation other than our feet...
They had this pirate ship with all the slides coming off of it - it was a lot of fun!
This is the Man-Cub head first and backwards splashing down at the end of the slide...
We walked over to the Roger Maris museum - very interesting...
The Man-Cub playing with one of the exhibits...
More Roger Maris stuff...
The Man-Cub is barely visible through the glass - he's watching an informational video about Roger Maris...
Y'all know that we don't own any Nintendo/Playstation/Xbox sort of games - but when we're 'on vacation' and the hotel has them we play - the Man-Cub is actually quite good - here he gets to put in his initials for the high score...
...as he played the game (we rented an hour of games) he got better and got to put his initials in about the first 5 slots...
We played pool in the games room...
This is an arcade game in the game room - it's pretty neat - you actually sit on a motorcycle and lean into the curves - it has a regular handlebar with a throttle and brake too - FUN! - but it makes me sort of carsick...
This game was called Galaxian - and the Man was actually quite good at it back in the day - it's an old 80's arcade game - here the Man gives the Man-Cub some pointers...
I'm always amazed at how easily the Man-Cub makes friends - during the three days we were here he befriended and played with several boys for hours - Mama is not 'needed' like she used to be (that just leaves more time for poolside knitting)...
We played Air Hockey too - Man is that a noisy game...
The Man-Cub 7 Mama 3 - obviously not my 'game'...
A poorly clad Man-Cub - I definitely didn't pack for a winter storm...
The scene outside our hotel - a lot of white stuff and 25 mile per hour winds - we stayed an extra night to avoid driving home in it...
This was the scene the next morning on the way home - a pretty spring day that will melt all the snow...

Slipper Shod
I am slipper shod most days - it keeps my handknit socks from wearing out so quickly. The only problem with that is that my slippers wear out instead...
...and I'm apparently 'right-footed' as my right slipper wears out first...
...these slippers have already had their soles replaced at least twice - the tops never seem to wear out...
...this time I added little felt pads to the soles - hoping to add a few more months of wear...
I know they don't quite match - I just used some yarn from my stash...

A Clean Sink
It's funny how a clean sink can brighten your day...

None of the elbow grease that went into this shiny sink was mine - all the Man's - we have very very hard water and if you don't dry it up right away you get little white spots on everything - that are then very hard to rub off
