...Friday Favorites...Veganizing Pre-Packaged Mixes...

...sometimes at the grocery store I see a pre-packaged food that looks good...and I read the label only to find that it's not vegan...and sometimes I use that as a starting point to create a similar dish...
...but I saw this box and thought Scout would like these cookies...
...so I read the label and was surprised to find that the ingredients are vegan...even the chocolate chips...
...so basically I followed the directions ...just subbing vegan butter and flax seed goo for the eggs...
...there were two packets in the box...one just looked like brown sugar...
...so I mixed that with Earth Balance and my vegan egg until it was nice and creamy...
...and then dumped in the other packet which was the flour and chocolate chips...
...and mixed it all up...one of the best things about vegan cookie dough is that you can eat it raw...
...I used my medium sized scoop to form the cookies as I wanted them to be fairly large...
...they turned out perfectly...
...this box made one dozen of the big cookies...and they were delicious...

...so this experiment veganizing a pre-packaged mix was a success...

  4. What a nice surprise/find!

    I blew someone's mind the other day with the fact many boxed cake mixes are vegan if you leave out or substitute the egg. I think I might have a friend convinced she really COULD make a vegan cake for me; that its not rocket science and doesn't even have to be from scratch.

      You're totally right about the cake mixes...and the subs are simple...you could even use applesauce in place of the eggs...and practically everyone has that in their pantry...
