...I got out my mandoline...and sliced a potato really thinly...
...and just arranged the slices on parchment...
...sprinkled with pink Himalayan salt...
...and microwaved...just until the chips started to turn golden...
...so I took those off the parchment...and popped the others back in the micro for just a few more seconds...
...until I had a whole plate of crispy fat free chips...
...so quick and good and fun to eat...

That looks so good - I would try it but I don't have a mandolin on board....maybe I'll remember to bring it next year. (Cutting with a knife would be too difficult I believe)

Delete...you might try making little slivers with a potato peeler...they wouldn't be perfectly shaped...but they'd be thin...
