...1.13...What I Ate in a Day...as a Vegan...

...I used the new griddle to bake/fry some tofu...it worked perfectly...just the texture I was going for...
...then I toasted a piece of homemade wheat/white bread...and made a little vegan-tofu-egg sammie...with a sprinkle of kala namak and pepper...it was yummy...
...for lunch I used the last bag of frozen spinach to make some cream of spinach soup...I'll put spinach in the cart again this week and see if we get any...
...I crumbled up some saltine crackers in it and it was really good...creamy...warm and comforting...
...not with lunch but a little bit later...I toasted another piece of bread and topped it with some VioLife cheddar...and had a nice cup of tea...so that was an afternoon snack...
...then for dinner...the Man was making a Poolish pizza...
...I whipped up some vegan Ranch dressing and made us both a big salad...
...I made my pizza into a flat bread with olives...
...and WOW...did that turn out great!....
...the texture we're getting with this Poolish is amazing...
...and I had some marinara pasta with mine...

  1. Certainly not as interesting as your meals! Oatmeal,peanut butter, apple slices,and cinnamon for breakfast. Leftover Asian coleslaw(with Ramen noodles) and white/sweet potato salad for lunch and fried lobster bites for supper. Snack was peanut clusters made from a bag of chocolate chips melted and peanuts. An easy fun dessert.

      ...I love that Ramen noodle slaw...Brit made a big vegan one for the Christmas party and it was so good...those white sweet potatoes are hard to find here...but they are good...

  2. what is poolash? It looks very delish.
    I tend to eat the same things most days, I am a boring vegan LOL. But thanks to you I now enjoy tofu cooked on our mini George Foreman, some days a make a marinade and other days just use a bbq sauce. I have also started grilling some of my veggies on the George Foreman, another idea picked up from you, and it is a lovely way to cook sweet potato and sweet onions.
    I have our grocery order to pick up today from Walmart, I have a big bag of romaine salad mix on the order, but with all the recent recalls I am not sure if I will get it.

    Yesterday I had my usual bowl of oatmeal with ground flax seed and soy milk. For lunch I had grilled tofu and sweet onion, with steamed brussel sprouts, sweet potato, kale, collard greens, purple cabbage and mushrooms. For dinner I had salad bar at a local restaurant as it was my once a month meet up with my 3 book club friends. The salad bar had a fantastic array of veggies and I enjoyed my salad with a warming mug of herbal tea. We had a extremely good discussion of the book we read, And The Mountains Echoed by Khalid Hosseini, it is an excellent book and we had plenty to discuss.

    1. Hi Bean,
      ...Poolish is a type of sponge that you make the day before you want to cook the bread...it's really good as it develops a lot of flavor...I've read a couple of Hosseini books and that one does sound good...
