...10.12...Over the Weekend...

...we started the weekend with a really big breakfast...really big...I shredded some potatoes...soaked them in some water...
...drained and dried them...
...and got them cooking outside on the Griddler...
...kind of shaped them into patties...like the hasbrowns you get at fast food restaurants...those unshreddable bits are just snacks...haha...
...then I ground up some corn meal...our health food store has coarsely ground organic corn meal...but it's just too coarse so I always grind it in my spice/coffee grinder...to make a finer meal...
...and I also needed to grind some flaxseed...which goes rancid pretty quickly after it's ground so I keep it in the freezer...
...added some flour...
...nd vegan 'buttermilk'...made by just adding a spoonful of apple cider vinegar to some soymilk...
...so cornmeal is a fun addition to waffles...especially if you're eating them with sorghum syrup/molasses like Daddy did...
...little snack pieces are ready...haha...so are the hashbrowns...
...and I had just a little bit of batter left...so I tried to make it fit in one quarter of the cooker...
...the finished hashbrowns...they turned out super...
...and the finished cornmeal waffles...
...so I was all carbed up and fueled for the day...
...before we left I mixed up a sparkling drink to take instead of...it's just the Aldi brand antioxident juice and a can of sparkling water...and it tastes just like a grape soda....
...then of course we went shopping...
...nothing much of note...the jalapenos and serranos are to make some more spicy hummus...
...after I got everything put away I made a pot of barley tea...
...I let it steep a nice long time...that way it's a little bit concentrated and I can make it last longer by adding some water to it...
...I made a loaf of bread in the bread machine...I've been tweaking my recipe and it is so delicious...

The perfect Loaf of White Bread in the Bread Machine...

Water - 11.5 oz
Avocado Oil - 1 tablespoon
Salt - 1 teaspoon
Sugar - 1 tablespoon
Bread Flour - 3.5 cups (17.3 oz / 490 g) - I actually weigh this one...and I always use the exact same organic flour...just so it turns out exactly the same... Yeast - 1 teaspoon

...and now the recipe is in the blog database so I can always find it...haha...
...I set it outside to cool off a bit...
...because I wanted to slice off the 'heel' and eat it right away slathered in vegan butter...
...and then I sliced the whole loaf...and put it in one of my recycled cereal bags...

~Wishing you a lovely start to your week!
