...I loved this poster...from Our Airman's squadron...it's so true...
...I finally (after three tries) have mastered the perfect Okara Cracker...
...I had tried adding some thick rubber bands to my rolling pin to make a uniform space for the thickness of the crackers...
...it worked...sort of...but it was messy as the 'rails' sort of smushed into the dough...
...but I 'learned' from this fail...
...and after I made a batch of soymilk...I made some better 'rails' to make my crackers a uniform thickness...these dollar store foam boards are 3/16" thick and I think that'll be the perfect thickness for crackers...
...so I taped those down to the counter and slid one of my opened up chip bags underneath...really the best thing for rolling out cookies/crackers etc...because nothing sticks to it...
...then I mixed the entire batch of okara (about 2 cups from one batch of soymilk using one cup of soybeans and two quarts of water) with 1 Tbls. psyllium husk powder and 1/4 cup of almond flour and 1/2 tsp. of salt...and that's it...
...rolled them out and scored them...
...and poked a few holes in each cracker...
...and kept reusing the leftover dough until I'd used it all up...
...and I was thrilled that they all fit on one pan...
...and gave the tops a sprinkling of flaky salt...
...and baked them at 350° F (176° C)...and they are perfectly crispy...and not hard...so the trick is to NOT use any flour...haha...
...what delicious food have you been eating lately?
~Have a lovely day!
