...3.17...What I Ate in a Day...as a Vegan...

...we don't normally do a "big" breakfast during the week...but we had a bottle of Just Egg about to go out of date...so...we chopped up some onion and pepper...
...got some Earth Balance sizzling in a pan...
...and poured in the rest of the bottle of Just Egg and scrambled it all together with the peppers and onions...
...y'all know I like my 'eggs' super well done...and it really seems to take a long time with these vegan eggs for some reason...
...but they are really really good...we also had toast...and the dregs of the Man's Pineapple Jam...and tea...of course...
...then for lunch I Griddler-ed some broccoli, carrots and potato...
...and had that with some leftover blackeyed peas...
...afternoon snack was just a big bowl of Brussels sprouts...Griddler-ed...of course...and then eaten out of hand...like popcorn...from a bowl...haha...
...and then again...during Lent...Wednesday's are Church nights...and the Man wanted pizza...but we didn't have time for that...so I cut up some pita in wedges...and warmed up some of his delicious marinara sauce...sprinkled some nooch on top of that...and made us each a big salad...

...after Church...I had some chocolate/brownie hummus...but I didn't take a photo of that...

  1. I had banana pancakes with fried plantains for breakfast....notice a theme there? Both the bananas and plantains were almost beyond the point of use so they both got used for breakfast. It's warm here - 85F inside the boat most days so fruit doesn't last long. We're quite used to it though - at home I would be too hot at 85, but here it seems nice. Anyhow, lunch was a tuna fish sandwich and dinner was leftover but a yummy concoction I made out of the cupboard - saffron rice, green chillis, canned diced tomatoes, onions, some spices and some dried soy chik'n pieces. I think you would have liked it. Love, K

      ...that's a lot of bananas...but good you got to use them up...I think I'd be fine at 85°...the Man definitely NOT...haha...and yes I think your concoction is right up my alley...

  2. Onions and green peppers must have been soooo perfect in the Just Egg! scrambled!!! I just can't find the liquid version of the Just Egg here ... the frozen thing is ok, but i'd love to try the liquid one!
    Your griddled vegetables are mouthwatering!

    Yesterday... i had leftovers all the way! For lunch, and for supper after teaching all day.
