...7.27...What I Ate in a Day...as a Vegan...

...breakfast was a quick tofu scramble...
...with toast and tea...of course...
...for lunch...I whipped up a vean toona salad...
...chickpeas...chopped pickles...shredded nori...and veganaise...
...used the heel of a loaf of bread...and had that with some BBQ chips and tea...
...afternoon snacks...an apple and some walnuts...
...and a cucumber...
...then for dinner...we're still using up all that lovely veg my baby brother and sweet SIL gave us before we left to go west...
...so I shredded up a rather large zucchini...
...and made some zucchini fritters on the Griddler...
...too much fritter...they sort of ran together into one large pancake...but I cut them apart...
...and did better portioning our the second batch...
...a ymmy plate of fritters...
...meanwhile...the Man was pan roasting the beautiful Brussels sprouts...
...and I briefly Griddlered a slice of the lentil tofu I'd made and frozen a few weeks ago...just to make it tough enough to go onto the grill...
...then I sliced it in two...and put it into a bun with some mustard and sauerkraut...and it made a perfectly good sausage substitute...
...the beautiful and delicious Brussels sprouts...
...then we used the leftover coals to roast some vegan marshmallows...
...perfectly roasted...and gooey in the middle...
...vegan grahams and dark vegan chocolate complete the fixin's...
...and we had some delicious vegan s'mores for dessert...
