...3.18...What I Ate in a Day...as a Vegan...

...for breakfast...we had too many ripe bananas from our shopping the past couple of weeks...so I made a "Banana Cake"...not muffins and not bread...using a veganized recipe from The Joy of Cooking...a cookbook we were given as a wedding present...and...for you...of course I found the recipe online too...

...we subbed vegan sour cream, Country Crock Plant Based spread and flax seed goo for the egg replacer...we did not make the filling (we call it icing...haha)...

...this is a light and mildly flavored 'cake'...it was ok...but I think we both prefer banana bread...
...for lunch I made a big 'greek' salad with vegan feta and homemade croutons...
...then I spread some vegan cream cheese on some homemade bread...sliced up a cucumber and sprinkled on some dill...we had these sammies at our wedding reception too...my sweet Sissie and my Mama spent hours that morning making sandwiches and then cutting them out with cookie cutters into cute little finger sandwich shapes...who knows what they did with all those crusts...haha...
...snacks for the day...were a leftover bowl of rice...half with vegan butter and half with a cut up store bought roma tomato...
...and a peeled and sectioned grapefruit...
...but the highlight of the day...was the Vegan Corned Beef dinner...I got out a baking dish...and opened a can of beets (only used the liquid for this 'recipe')...some pickling spice, mustard seeds, garlic and onion salt (don't add any other salt)...and a bay leaf...
...then I sliced a block of tofu...and let that marinate for a while...(a couple of hours)...
...and then I baked it for about an hour...
...and then because I didn't want the tofu to be soft...I like it to be a bit firmer and have a little 'bite' to it...so I took it out of the marinade and baked it for a further half hour or so on parchement...
...served with other Irish fare...stewed potatoes, cabbage, greens and cornbread...
...it was so delicious...I'll definitely make it again...
...and finally...I've been having this tea combination most evenings...peppermint and chamomile...with some homemade almond milk (I'd use storebought if I could get it...haha)...so soothing and delicious...it's a nice bedtime treat...

  1. I remember making those sandwiches for your wedding! I bet Mom saved the crusts and made dressing or something. And that corned "beef" looks wonderful! Love, K

  2. I was thinking I had a new recipe for bananas until you said you prefer banana bread, lol. I'm afraid I didn't make any special St. Patrick's Day meal. In fact I believe I ordered out (Chinese) because I've been feeling poorly all week. I very seldom order out because it's so expensive. There was actually a lot of food though and it turns out I was quite hungry. I noticed that this year there seemed to be a lot of people making corned beef dinner for St. Patrick's Day. I hadn't noticed that in other years. Enjoy your weekend.

      ...it wasn't "bad"...we just prefer regular old banana bread...set in our ways...I guess...
